Rhubarb Cake
Ingredients:
Yellow Cake Mix, mixed to package/recipe instructions
4 C Rhubarb
1 C Sugar
1 C Heavy Cream
Instructions: Pre-Heat oven to 375. Stir cake mix together and pour into the bottom of a greased 9x13 or 11x14 pan.  (I prefer the larger one of the two but have made it in both sizes. Dice Rhubarb and measure 4 Cups and place on the top of the cake mixture in the pan. Sprinkle with 1 C of Sugar. Pour 1 C Heavy Cream over top and bake uncovered until solid and browning 35-45min.
